The first training and research centre dedicated entirely to the world of ham
An innovative multidisciplinary project to help professionals in the sector expand their knowledge.
Equipped with unique infrastructures, it is a multipurpose space open to the knowledge and participation of all professionals in the sector. With more than 1,200 m2 of facilities, in addition to the more than 10,000 m2 of Monte Nevado curing cellars, the Campus has a capacity for more than 250 people.

Serrano ham 24
Serrano ham "24", from white pigs raised in Spain, selected for their size, maturity and proportion of fat. We select hams from heavy pigs, which allows us to prolong the curing process for an average of 24 months.
Tasting Notes: Colour cut in shades of pink to purple red, streaked with fine veins and occasional hints of tyrosine due to the long curing process. Characteristic cured aroma, delicate and with personality.
More than 120 years of history guarantee the experience and knowledge of our master ham makers at Monte Nevado. Due to its flavour, aroma and texture, Jamón Serrano 24 is a piece of excellent quality. For many years at Monte Nevado they have been able to find the keys to the maturation process of this species of pig.
Our pigs are raised in a 100% natural environment, under proper food control and exhaustive care. The 24 Serrano ham leaves our drying rooms through the front door and at its perfect moment, earning it the award for the best Serrano ham in Spain in 2022.
100% Iberian Acorn-fed Ham
100% Organic Iberian Bellota Ham comes from 100% Iberian breed animals, which are raised freely in the best pastures during the months of montanera, fed on acorns and grass. This product comes from Monte Nevado's desire to offer a gourmet product based on the origin of native strains, breeding and management on accredited farms with sustainability criteria with totally organic food.
Tasting Note: When cutting the ham, we observe lean meat with shades ranging from pink to very intense red, a shine derived from the white-coloured marbled fat and small formations of “crystals”, precipitates of amino acids, also white, which indicate slow processing and curing.
The external fat of the piece has a soft and penetrable texture, with signs of great fluidity.
From the start we perceive the imprint of the acorn in the flavour of the cured and aged meat, without noticing rancidity, with pleasant notes of butter and cured fat from the interior, and notes of toasted hazelnut, wet wood and wild flowers. At the end, sweeter notes predominate due to its higher fat content. The flavour persists for a very long time in the mouth due to the quality of the acorn fruit in this vintage.
It is a slightly salty product, with sweet notes from the starch of the acorn, reminiscent of nuts, and a marked presence of umami flavour, responsible for palatability, which balances and rounds out the whole flavour, enhancing and enhancing it in a pleasant and delicious way.


50% Iberian Cebo Ham
Iberian Cebo Ham (50% Iberian Breed), comes from native animals with black hooves, drooping rump and slow growth.
Tasting Notes: Deep red colour, veined cut. Soft fat with low melting point. Very aromatic and long flavour with a melting and unctuous sensation in the mouth.
This ham comes from Iberian pigs whose breed origin and slow growth allow for optimal fat infiltration. 120 years of history have allowed us to get to know the best farms to select them at source, and from them to meticulously produce our hams.
It is one of the hams with the best price-quality ratio on the market.
