Cachopo is an Asturian delicacy that combines tradition and heartiness: two breaded fillets stuffed with ham and cheese, crispy on the outside and juicy on the inside.
Cachopo is one of the most representative dishes of Asturian cuisine and an emblem of the gastronomy of northern Spain. It consists of two large beef fillets traditionally filled with serrano ham and cheese, breaded and fried until achieving a golden and crispy exterior. Its origin dates back to Asturian home cooking, where families sought to prepare tasty, hearty, and comforting meals.
Although the traditional format remains the favorite, nowadays there are many variants of cachopo that incorporate other ingredients in the filling such as mushrooms, asparagus, peppers, or blue cheeses, adapting to more modern tastes without losing its essence. Its presentation is usually accompanied by French fries, Padron peppers, or a salad, making it a complete and very satisfying meal.
Besides its flavor, cachopo stands out for its generous nature and spirit of sharing. It is common to see it at family gatherings or among friends, where it is served in generous portions and with pride. Its growing popularity has crossed borders, becoming a benchmark of the most traditional and flavorful Spanish cuisine, capable of conquering palates with its simplicity and heartiness.
