MONTE NEVADO: BEST SERRANO HAM OF 2022 IN SPAIN

In 2022, Monte Nevado's 24-month Serrano ham was recognized as the best Serrano ham by the Ministry of Agriculture, in the Serrano Ham category.
Throughout the history of the Alimentos de España Awards, held every two years, the Ministry of Agriculture has awarded Monte Nevado in its second edition (2018) in the Best 100% Iberian Acorn Ham category, and in the fourth and latest edition (2022), in the Best Serrano Ham category. Additionally, Monte Nevado was a finalist in the 2018 awards in the Serrano Ham category and in 2020 in the Acorn Ham category.
Serrano ham comes from white breed pigs and is characterized by the "V" shape cut made on the skin, also known as the "serrano cut." These hams are cured in a natural, dry environment with low temperatures and the right microbiology—conditions typical of the Spanish mountains. One of the main characteristics of hams cured in the mountains is the removal of the skin, which provides better protection and curing of the product, allowing the surface to dry out as much as possible. This presentation is now a hallmark of Serrano ham.
The term "jamón serrano" is a Traditional Speciality Guaranteed (T.S.G.), and its traditional production process is protected by the European Union. Each piece used in the process is carefully selected to ensure it weighs no less than 9.5 kg. The making of Serrano ham is a delicate and specific process, resulting in an authentic Spanish flavor and a high-quality product.
