Spanish cuisine is exceptional, both in variety and richness of products and recipes, making it one of the best in the world. Each region offers unique specialties, from pulpo a la gallega to cocido madrileño. Additionally, Spanish cooking blends traditional recipes with modern techniques, gaining global recognition thanks to innovative chefs.
Spanish cuisine has been shaped by the different cultures that have passed through the Iberian Peninsula, with a significant influence from the Arabs who left a strong gastronomic impact. They introduced light seasonings applied to various dishes and combinations of fruits and nuts with fish or meats, giving them a unique flavor. Later, with the formation of the Christian kingdoms, pork began to be used in cooking, as it was forbidden in Arab culture. The entire pig was utilized, giving rise to the famous Spanish saying, "Del cerdo se aprovechan hasta los andares" (Everything of the pig is used, even its footsteps).
The year 1492 radically changed the Peninsula in many ways after the discovery of the new continent, America. One of these changes was in the country’s gastronomy, which underwent a drastic shift with the introduction of products like potatoes, tomatoes, vanilla, paprika, oats, various legumes, and even chocolate. Thanks to these ingredients, a wide variety of dishes were created that are now some of the most recognized in Spanish cuisine, such as tortilla española, fabada asturiana, gazpacho, lentils with chorizo, and even the famous chocolate con churros.

Each region offers a unique cuisine, made with local products that enrich the flavors and transform the ingredients into diverse and delicious recipes.
